I used to do these curated Friday posts pretty often, but I phased them out. I think it’s time to throw one in the mix again, just because I can. And it’s Friday – why the heck not?
So, Happy Friday, y’all! I’ll treat this post as a celebration of Friday and the weekend, fused with some “life lately” updates and happenings. Life always has something worth sharing, and I’ve been up to some fun adventures in the last few weeks.
First of all, have y’all heard about the Blog-tember Challenge, hosted by Bailey at Brave Love Blog? It’s a month-long linkup series to challenge bloggers to write every day, and to think and write about some topics they may have never thought about before. I’m all about trying new things, so I can’t wait to join in! Will you be blogging all through September with us?!
I’ve been doing a whole lot of cooking and baking lately, and I’m so glad to say I’ve done it (mostly) cleanly. I’ve been cooking (mostly) cleanly for a few months now, and it’s made such a huge difference in my diet. I just feel better. My diet isn’t perfect, and I don’t believe anyone’s is, but I know I’m cooking better, eating better, and feeling better. So, that’s a win in my book.
Anyway, I’ve become a huge fan of quinoa. It’s so versatile and it’s easy to add to almost any meal or dish. Last week I made cilantro-lime chicken and quinoa, and I will definitely be making that again. Also last week I made two kinds of zucchini bread: plain and chocolate. Neither loaf lasted very long.
One of my weaknesses is breakfast pastries, especially muffins. I know they’re not the best thing to eat in the mornings, but I found a way to make them somewhat healthier, and that was enough for me. Earlier this week I shared my recipe for guiltless brownie bites. Y’all, those are good. Make some and you’ll understand. I don’t know how mine have lasted throughout the week.
One of the many things I love about living here is that I have Publix grocery stores again. We had them (and loved them) when we lived in Georgia; my mom is pretty jealous that I get to shop at Publix and she doesn’t. Store brands are hit or miss for me, but I love Publix’s store brand. I’ve been buying their tea and coffee cups–yes they make cups for Keurig brewers–and they’re so good! I’m also a fan of Publix English muffins.
And…here’s a little hint to something super exciting that’s coming to my life sometime in the next couple of weeks…
